  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 can (14.5 ounce) diced tomatoes undrained
  • 1 cup chicken broth
  • 1 teaspoon dried Italian seasoning

Preparation

  • Pat chicken thighs dry, cut into 1-inch pieces if large, and season with salt and pepper.
  • Heat olive oil in a large skillet over medium heat, then sauté chopped onion for 5-7 minutes until soft.
  • Add minced garlic to the skillet and cook for another minute until fragrant, being careful not to burn it.
  • Add seasoned chicken pieces to the skillet and brown for 5-7 minutes, stirring occasionally, without cooking through.
  • Pour in undrained diced tomatoes, chicken broth, and Italian seasoning, stirring to combine and scrape up browned bits.
  • Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes until chicken is cooked through (165°F/74°C) and sauce thickens slightly.
  • Taste and adjust seasoning as needed, then ladle hot into bowls and serve.

Notes

For extra flavor, consider adding a pinch of red pepper flakes with the Italian seasoning.
