  • 1 tbsp olive oil
  • 1 lb smoked sausage (andouille or kielbasa), sliced
  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • large yellow onion, chopped
  • 2 celery stalks, chopped
  • green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 ½ cups long-grain white rice, uncooked
  • 2 tbsp Cajun seasoning (or more, to taste)
  • ½ head green cabbage, cored and chopped

Seasoning & Garnish

  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish
  • Green onions, sliced for garnish

Instructions
 

Cooking Steps

  • Heat olive oil in a Dutch oven over medium-high heat. Brown the sliced sausage for 5-7 minutes; remove and set aside, reserving drippings.
  • Add chicken thighs to the pot and cook until browned on all sides, about 6-8 minutes. Remove chicken and set aside with the sausage.
  • Reduce heat to medium, then add onion, celery, and bell pepper to the pot and cook for 8-10 minutes, stirring occasionally until softened.
  • Stir in minced garlic and Cajun seasoning, cooking for another minute until fragrant.
  • Return sausage and chicken to the pot, then stir in diced tomatoes, chicken broth, and uncooked rice. Bring the mixture to a boil.
  • Reduce heat to low, cover tightly, and simmer for 20 minutes until liquid is absorbed and rice is tender. Do not lift the lid.
  • Gently stir in the chopped cabbage, re-cover, and cook for 5-10 minutes until tender-crisp.
  • Remove from heat, rest for 5 minutes covered, then fluff with a fork and season with salt and pepper. Garnish with parsley and green onions before serving.

Notes

For extra heat, add a pinch of cayenne pepper with the Cajun seasoning. If you prefer a milder flavor, adjust the amount of Cajun seasoning to your taste. This dish reheats well and can be a great make-ahead meal. Enjoy with a side of cornbread or a light salad for a complete meal.
