Bang Bang Chicken Skewers

Ingredients
  

For the Chicken Skewers:

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • ½ tsp grated fresh ginger
  • ¼ tsp black pepper
  • Wooden or metal skewers if using wooden, soak them in water for at least 30 minutes to prevent burning

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1-2 tbsp Sriracha
  • 1 tsp honey or maple syrup
  • 1 tbsp lime juice
  • Pinch salt

For Garnish (Optional):

  • Chopped fresh cilantro
  • Toasted sesame seeds
  • Sliced green onions

Instructions
 

Prepare the Chicken

  • Combine cubed chicken with soy sauce, rice vinegar, sesame oil, ginger, and pepper in a bowl.
  • Toss to coat evenly and marinate for at least 15-20 minutes at room temperature, or refrigerate for up to 30 minutes.

Make the Bang Bang Sauce

  • Whisk together mayonnaise, sweet chili sauce, Sriracha, honey/maple syrup, lime juice, and salt in a small bowl.
  • Taste and adjust Sriracha or honey/maple syrup to your preference; set aside.

Preheat Grill/Pan

  • Preheat grill to medium-high heat, or heat a grill pan or cast iron skillet with a drizzle of oil over medium-high heat.

Assemble Skewers

  • Thread the marinated chicken pieces onto pre-soaked wooden or metal skewers, ensuring not to overcrowd them.

Cook the Skewers

  • Grill skewers for 3-4 minutes per side until cooked through and lightly charred (internal temperature 165°F/74°C).
  • Alternatively, cook in a hot pan for 4-6 minutes per side until golden brown and cooked through.

Serve

  • Transfer cooked skewers to a platter and generously drizzle with the prepared Bang Bang Sauce.
  • Garnish with chopped cilantro, toasted sesame seeds, and sliced green onions, if desired.

Notes

For extra flavor, marinate the chicken overnight. Adjust the amount of Sriracha to control the spice level of your Bang Bang sauce. If using wooden skewers, make sure to soak them thoroughly to prevent burning on the grill or in the pan.
