Ingredients
  

Chicken Marinade

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 cloves garlic
  • 1 tbsp fresh ginger
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Pinch red pepper flakes optional

Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp sriracha
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil

Garnish (Optional)

  • fresh cilantro chopped
  • Toasted sesame seeds
  • Lime wedges

Instructions
 

Marinate Chicken

  • Combine chicken with garlic, ginger, soy sauce, rice vinegar, sesame oil, and red pepper flakes in a bowl. Toss to coat and refrigerate for 30 minutes to 2 hours.

Prepare Skewers

  • Soak wooden skewers if using, then thread marinated chicken onto them, ensuring space between pieces.

Make Bang Bang Sauce

  • Whisk together mayonnaise, sweet chili sauce, sriracha, honey/maple syrup, rice vinegar, and sesame oil until smooth; adjust taste as needed.

Cook Skewers

  • Grill on medium-high heat for 3-4 minutes per side until cooked through (165°F/74°C) with char marks. Alternatively, bake in a 400°F (200°C) oven on a wire rack for 18-25 minutes, flipping halfway, and broil for the last 2-3 minutes for extra color.

Serve

  • Arrange cooked skewers, drizzle generously with Bang Bang sauce or serve on the side. Garnish with cilantro, sesame seeds, and lime wedges if desired.

Notes

For extra flavor, marinate the chicken overnight. If grilling, ensure the grates are clean and oiled to prevent sticking. When baking, use a wire rack to allow for even cooking and browning.
