  • 1 can black beans, drained and rinsed
  • 1 cup rice Regular white rice is used in this recipe.
  • 1 lb sausage, sliced Smoked or spicy sausage can be used for extra flavor.
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth Ensure it is gluten-free if necessary.
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste Salt and pepper

  • cilantro Fresh, for garnishing.
  • lime For squeezing on top.
  • avocado Sliced, for garnishing.

Instructions
 

Preparation

  • In a large pot, sauté the onion and garlic over medium heat until soft.
  • Add the sausage and cook until browned.

Cooking

  • Stir in the rice, black beans, chicken broth, cumin, paprika, salt, and pepper.
  • Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
  • Fluff with a fork and serve hot.

Serving

  • Top with cilantro, lime, or avocado as desired.

Notes

For extra flavor, try using smoked sausage or spicy sausage. Adjust spices to taste; add chili powder or diced jalapeños if you prefer it spicy. You can also add bell peppers or corn for extra heartiness. To store leftovers, let the dish cool completely before transferring it to an airtight container. It can be stored in the refrigerator for up to three days, or freeze for up to three months. Reheat before serving.
