  • 1 pound Andouille sausage sliced
  • 2 bell peppers finely diced
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 2 teaspoons Cajun seasoning
  • 14.5 ounces canned diced tomatoes undrained
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup Parmesan cheese grated
  • 2 tablespoons Fresh parsley chopped (for garnish)

Cooking Steps

  • Cook pasta according to package directions, then drain and set aside.
  • In a large skillet, brown the sliced Andouille sausage over medium-high heat.
  • Remove sausage, then add bell peppers and onion to the skillet, cooking until softened.
  • Stir in minced garlic and Cajun seasoning, cooking for another minute until fragrant.
  • Add diced tomatoes, heavy cream, and chicken broth, bringing the mixture to a simmer.
  • Return the cooked sausage to the skillet, then stir in the cooked pasta and grated Parmesan cheese.
  • Toss everything together until well combined and heated through; serve immediately, garnished with fresh parsley.

Notes

Adjust the amount of Cajun seasoning to your spice preference. A splash of pasta water can be added to the sauce if it's too thick.
