For the Pasta

  • 12 ounces Fettuccine pasta
  • 1 tablespoon Olive oil

For the Sauce

  • 14 ounces Smoked sausage sliced
  • 2 cloves Garlic minced
  • 2 cups Heavy cream
  • 1 cup Parmesan cheese grated
  • 2 teaspoons Cajun seasoning
  • 0.5 cup Chicken broth
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley chopped

Optional Garnish

  • 0.5 teaspoon Red pepper flakes

Cooking Instructions

  • Boil water in a large pot, add fettuccine, and cook according to package directions until al dente; drain and toss with olive oil to prevent sticking.
  • While pasta cooks, brown sliced smoked sausage in a large skillet over medium-high heat for 5-7 minutes until lightly crisped, then remove and set aside, reserving 1 tablespoon of drippings.
  • Reduce heat to medium, add minced garlic to the skillet with reserved drippings, and sauté for 1 minute until fragrant.
  • Pour in chicken broth and heavy cream, bring to a gentle simmer, then stir in Cajun seasoning, salt, and black pepper.
  • Gradually whisk in grated Parmesan cheese until the sauce is smooth and thickened.
  • Add the cooked fettuccine and browned smoked sausage to the skillet, tossing gently to coat with the Alfredo sauce.
  • Stir in fresh chopped parsley and serve immediately, garnished with red pepper flakes if desired.

Notes

For extra heat, add more Cajun seasoning or a pinch of cayenne pepper. You can also add some diced bell peppers and onions to the sausage for more vegetables and flavor.
