  • 2 lbs Yukon Gold potatoes washed and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and freshly ground black pepper to taste
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons fresh parsley chopped (for garnish)

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine cubed potatoes, olive oil, minced garlic, dried rosemary, dried thyme, paprika, salt, and pepper; toss well to coat evenly.

Cooking

  • Spread seasoned potatoes in a single layer on a large baking sheet, ensuring not to overcrowd the pan.
  • Roast for 25-30 minutes, flipping halfway, until potatoes are tender and golden brown.
  • Remove baking sheet from oven, sprinkle shredded Parmesan cheese evenly over hot potatoes, and return to oven for 5-7 minutes until cheese is melted and golden.

Serving

  • Garnish with fresh chopped parsley before serving.

Notes

For extra crispiness, ensure potatoes are completely dry before tossing with oil and spices. Adjust herbs and spices to your preference; fresh herbs can also be used, tripling the amount of dried herbs.
