Instructions

  • Measure out 9 cups of Chex cereal into a very large bowl and set aside.
  • Combine white chocolate chips and unsalted butter in a microwave-safe bowl; microwave in 30-second intervals until melted and smooth, being careful not to overheat.
  • Stir cream cheese powder and dry cherry gelatin mix into the melted white chocolate until combined, creating a pink mixture with a cherry aroma.
  • Pour the warm mixture over the cereal and gently fold with a spatula until all cereal pieces are evenly coated.
  • In a large zip-top bag or a bowl with a lid, combine powdered sugar; add half of the coated cereal, seal, and shake vigorously until fully coated, then repeat with the remaining cereal.
  • Spread the coated cereal onto a parchment-lined baking sheet to cool and set for 15-30 minutes, or refrigerate for quicker chilling; once cooled, break up clumps and serve.

Notes

Ensure the white chocolate is not overheated to prevent seizing. For best results, use Rice Chex or Corn Chex. If you don't have a large zip-top bag, a deep bowl with a lid works just as well for the sugar dusting.
