  • 2 pints cherry tomatoes
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 pound spaghetti
  • 1/2 cup fresh basil chopped
  • 1/4 cup Parmesan cheese grated
  • Salt to taste
  • Black pepper to taste

  • Preheat oven to 400°F (200°C) and toss cherry tomatoes with olive oil, minced garlic, oregano, red pepper flakes, salt, and pepper on a baking sheet.
  • Roast the tomatoes for 20-25 minutes, or until they burst and soften.
  • While tomatoes are roasting, cook spaghetti according to package directions, then drain, reserving 1/2 cup of pasta water.
  • Add the roasted tomatoes to the cooked pasta, along with the fresh basil and grated Parmesan cheese.
  • Toss everything together, adding a splash of reserved pasta water if needed to create a sauce, then serve immediately.

Notes

For extra flavor, you can add a splash of balsamic glaze or a squeeze of lemon juice after plating. Adjust red pepper flakes to your preferred spice level.
