Chicken Garlic Parmesan Pasta

Ingredients
  

Chicken

  • 1.5 lbs Chicken breast boneless, skinless, cut into 1-inch pieces
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil

Pasta

  • 12 oz Fettuccine
  • Salt for pasta water

Sauce

  • 2 tbsp Butter
  • 4 Garlic cloves, minced
  • 2 tbsp All-purpose flour
  • 2 cups Milk whole
  • 0.5 cup Heavy cream
  • 1 cup Parmesan cheese grated, plus more for garnish
  • 2 oz Cream cheese softened
  • 1 tsp Italian seasoning
  • 0.25 tsp Red pepper flakes optional
  • 2 tbsp Fresh parsley chopped, for garnish

Instructions
 

Cooking Steps

  • Cook fettuccine according to package directions, then drain.
  • Season chicken pieces with salt and pepper, then cook them in olive oil in a large skillet until browned and cooked through. Remove the chicken and set it aside.
  • In the same skillet, melt butter over medium heat, then add minced garlic and sauté for 1 minute.
  • Stir in flour, cooking for 1 minute, then gradually whisk in milk and heavy cream until fully incorporated.
  • Bring the sauce to a simmer, stirring constantly, until it thickens; then stir in Parmesan cheese, cream cheese, Italian seasoning, and red pepper flakes.
  • Continue cooking until all the cheese has melted and the sauce is smooth, then return the cooked chicken to the skillet.
  • Add the drained pasta to the sauce with chicken and toss everything together to evenly coat.
  • Serve the pasta immediately, garnished with fresh parsley and extra Parmesan cheese as desired.

Notes

For a richer sauce, consider using only heavy cream instead of milk. You can also enhance the dish by adding spinach or other vegetables during the final cooking stages for extra nutrients and flavor.
