  • 2 lbs chicken breast boneless, skinless, cooked and shredded
  • 8 cups chicken broth
  • 6 oz egg noodles
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1/2 cup onion diced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation

  • Heat olive oil in a large pot over medium heat. Add diced onion, sliced carrots, and sliced celery; cook until softened, about 5-7 minutes.
  • Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
  • Add the cooked and shredded chicken breast and egg noodles to the pot. Cook for an additional 8-10 minutes, or until noodles are tender.
  • Season with salt and black pepper to taste. Serve hot.

Notes

For extra flavor, you can add a bay leaf to the broth while simmering, then remove it before serving. Fresh parsley can be added as a garnish.
