Chicken Spring Rolls

Ingredients
  

Filling

  • 1 cup cooked shredded chicken
  • 1 cup finely shredded cabbage
  • 1/2 cup shredded carrots
  • 2 green onions, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp ginger, grated

Assembly and Frying

  • 18-20 spring roll wrappers
  • Vegetable oil for frying
  • Sweet chili sauce for dipping Optional

Preparation

  • In a bowl, combine shredded chicken, cabbage, carrots, green onions, soy sauce, sesame oil, and grated ginger; mix thoroughly.

Assembly

  • Place a spring roll wrapper with a corner facing you, then add about 2 tablespoons of filling near that corner.
  • Fold the bottom corner over the filling, fold in the side corners, and roll tightly upwards; moisten the top corner with water to seal.

Deep Frying

  • Heat 2-3 inches of vegetable oil in a deep pan to 350°F (175°C).
  • Fry spring rolls in batches for 3-5 minutes, turning occasionally, until golden and crispy; drain on a wire rack over paper towels.

Notes

For extra flavor, you can add a pinch of white pepper to the filling. Make sure the oil is at the correct temperature to ensure crispy spring rolls without being too greasy.
