Ingredients
  

Salad

  • 15 ounce can chickpeas, rinsed and drained
  • 1/2 cup feta cheese, crumbled
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh parsley, chopped

Lemon-Herb Dressing

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Preparation

  • In a large bowl, combine the rinsed and drained chickpeas, crumbled feta cheese, diced avocado, halved cherry tomatoes, diced cucumber, finely chopped red onion, and fresh chopped parsley.

Dressing

  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper until well combined.

Notes
