  • 1 lb lean ground beef (450g)
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2-3 cloves garlic minced
  • 1 bell pepper (any color) chopped
  • 1 cup frozen mixed vegetables (about 150g) (peas, carrots, corn, green beans)
  • 1 can diced tomatoes (14.5 oz / 411g), undrained
  • 1/2 cup beef broth (120ml)
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste

  • Cooked pasta (macaroni, penne, etc.), rice, or crusty bread

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat, then add ground beef and cook for 5-7 minutes until browned, breaking it up with a spoon.
  • Drain excess fat, then add chopped onion and bell pepper to the skillet and sauté for 3-5 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
  • Stir in frozen mixed vegetables, undrained diced tomatoes, beef broth, and Italian seasoning, then season generously with salt and pepper.
  • Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes until vegetables are tender and sauce thickens.
  • For the Pasta Toss hack, add 1 cup of uncooked small pasta and an additional 1/2 cup of beef broth or water, ensuring the pasta is covered. Simmer, covered, until al dente, stirring occasionally.
  • For the Cheese Blanket Finish hack, sprinkle shredded cheese over the skillet mixture just before serving. Cover for 1-2 minutes until the cheese is melted and gooey.

Notes
