Ingredients
  

Meatloaf

  • 2 lbs ground beef (or a blend of beef, pork, and veal)
  • 1 cup breadcrumbs (panko or plain)
  • 2 large eggs
  • 1 medium onion finely chopped and sautéed
  • 2 cloves garlic minced and sautéed
  • 1/2 cup milk (or beef broth)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 cup chopped fresh parsley

For the Glaze

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard

Instructions
 

Preparation

  • Finely chop the onion and mince the garlic, then sauté them in a pan with olive oil until softened before letting them cool.
  • In a large bowl, combine the ground meat, cooled sautéed onions and garlic, breadcrumbs, eggs, milk, salt, pepper, oregano, thyme, and parsley.

Cooking

  • Gently mix the ingredients with your hands until just combined, being careful not to over-mix.
  • Shape the mixture into a uniform loaf and place it on a parchment-lined baking sheet or in a loaf pan.
  • Whisk together ketchup, brown sugar, Worcestershire sauce, and Dijon mustard in a small bowl to create the glaze.
  • Preheat your oven to 350°F (175°C) and bake the meatloaf for 45-50 minutes.
  • During the last 10-15 minutes of baking, remove the meatloaf and spread the glaze evenly over the top.
  • Return to the oven and continue baking until the internal temperature reaches 160°F (71°C).

Serving

  • After baking, let the meatloaf rest for 10-15 minutes before slicing to ensure a moist and flavorful result, then slice and serve warm.

Notes

For an extra touch of flavor, you can add a pinch of red pepper flakes to the glaze. To prevent the meatloaf from sticking, lightly grease your loaf pan or baking sheet if not using parchment paper. Always rest the meatloaf before slicing to keep it juicy.
