  • 4 medium-sized Boneless, Skinless Chicken Breasts
  • 1 cup Panko Breadcrumbs
  • 1/2 cup Grated Parmesan Cheese
  • 1 tablespoon Garlic Powder
  • 1 teaspoon Dried Italian Seasoning
  • Salt To taste
  • Black Pepper To taste
  • 2 tablespoons Olive Oil plus more for greasing
  • 2 large Eggs lightly beaten
  • Fresh Parsley For garnish (optional)

Preparation

  • Preheat your oven to 400°F (200°C) and lightly grease a baking sheet or line it with parchment paper.
  • If chicken breasts are thick, pound them to 1/2 to 3/4 inch thickness for even cooking.

Coating the Chicken

  • Whisk eggs in one shallow dish. In another, combine Panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  • Dip each chicken breast in egg, then dredge in the breadcrumb mixture, pressing to coat well.

Baking

  • Place coated chicken on the prepared baking sheet and drizzle with olive oil.
  • Bake for 20-25 minutes, or until cooked through and golden brown with an internal temperature of 165°F (74°C).
  • Remove from oven, let rest a few minutes, and garnish with fresh parsley if desired before serving.

Notes

For extra flavor, consider marinating the chicken in a little olive oil and garlic powder for 30 minutes before breading. You can also experiment with different dried herbs like oregano or parsley in the breadcrumb mixture.
