  • 1 cup finely chopped pecans, toasted
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted (1/2 stick)
  • 1 large egg yolk
  • Powdered sugar Optional: for dusting

Preparation

  • Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the toasted pecans, flour, granulated sugar, brown sugar, vanilla extract, and salt.
  • Add the melted butter and egg yolk, then mix until a cohesive dough forms.
  • Roll the mixture into 1-inch balls and place them on the prepared baking sheet, 1 inch apart.
  • Bake for 12-15 minutes until the edges are lightly golden, knowing they will firm up as they cool.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely; dust with powdered sugar if desired.

Notes

Ensure pecans are finely chopped for better dough consistency. The dough might be slightly crumbly at first, but it will come together as you mix it. Do not overbake as the balls will become too dry. For an extra festive touch, roll cooled balls in a mixture of cinnamon sugar before dusting with powdered sugar.
