  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 4 ripe but firm bananas cut in half lengthwise, then in half crosswise
  • 1/4 cup dark rum
  • 1/2 teaspoon vanilla extract
  • Vanilla ice cream for serving

Preparation

  • Measure all ingredients and slice the bananas.

Cooking

  • Melt the butter in a large, heavy-bottomed skillet over medium heat.
  • Stir in brown sugar and cinnamon, cooking until dissolved and bubbly, about 2-3 minutes, to create the caramel sauce.
  • Add banana pieces to the skillet and cook for 1-2 minutes per side until softened and coated in caramel.
  • Remove pan from heat, pour rum over bananas, and carefully ignite with a long-handled lighter; allow flames to subside.
  • Stir in vanilla extract after the flames are gone.

Serving

  • Spoon the warm Banana Foster over scoops of vanilla ice cream and serve immediately.

Notes

Ensure bananas are ripe but firm for best results. Be extremely careful when flambéing the rum; ensure adequate ventilation and keep flammable items away from the pan. For an extra touch, you can add a pinch of nutmeg to the caramel sauce.
