  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch salt

  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup sugar-free chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.

Mixing

  • In a large bowl, combine the mashed bananas, almond butter, applesauce, and vanilla extract; mix until smooth.
  • Add the rolled oats, cinnamon, and salt; stir gently until just combined, avoiding overmixing.
  • If using, fold in the shredded coconut and sugar-free chocolate chips.

Baking

  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart, and flatten slightly if desired.
  • Bake for 12-15 minutes, or until the edges are lightly golden and the cookies are set.
  • Cool the cookies on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

These cookies are naturally sweet from the bananas, making them a great option for those avoiding added sugars. Store them in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. For extra flavor, you can lightly toast the shredded coconut before adding it to the dough.
