  • 2 slices of your favourite bread sourdough or whole wheat recommended
  • 1 tablespoon good quality butter
  • Salt to taste preferably flaky sea salt
  • Freshly ground black pepper to taste

Optional

  • 2 slices bacon or 1 sausage link for serving
  • Fresh fruit berries, sliced banana for serving

Cooking Steps

  • Place a non-stick pan or cast-iron skillet over medium-low heat and add 1/2 tablespoon of butter, allowing it to melt slowly without browning.
  • Crack two eggs into the warmed pan; whisk them for scrambled eggs or let them cook undisturbed for fried eggs.
  • Lightly season the eggs with salt and pepper immediately, cooking scrambled eggs until custardy or fried eggs until whites are set and yolks are runny.
  • While the eggs cook, preheat a separate pan or toaster and toast your bread to your preferred crispness.
  • Spread the remaining 1/2 tablespoon of butter on the warm toast and sprinkle with a tiny pinch of flaky sea salt for extra flavor.
  • Transfer the cooked eggs and buttered toast to a plate and serve with optional crispy bacon or sausage and fresh fruit.
