  • 4-5 Roma tomatoes medium-sized ripe
  • 1/4 cup fresh basil finely chopped
  • 2-3 cloves garlic minced
  • 3-4 tablespoons extra virgin olive oil
  • 1-2 tablespoons balsamic glaze optional
  • Salt to taste
  • freshly ground black pepper to taste

  • Wash and core the Roma tomatoes, then dice them into small, even pieces and place them in a medium bowl.
  • Finely mince the garlic and finely chop the fresh basil, then add both to the bowl with the diced tomatoes.
  • Pour extra virgin olive oil over the tomato mixture, and season generously with salt and black pepper; if desired, add red pepper flakes or Parmesan cheese.
  • Gently toss all the ingredients together until they are well combined.
  • Cover the bowl and let the dip sit at room temperature for at least 30 minutes to an hour to allow the flavors to meld and deepen.
  • Just before serving, drizzle with balsamic glaze, if using, either stirring it in lightly or creating an attractive swirl on top.

Notes

For best flavor, ensure tomatoes are ripe and allow adequate time for the dip to meld before serving. Serve with toasted baguette slices or crackers.
