Ingredients
  

Bruschetta Topping

  • 1 cup finely diced Roma or cherry tomatoes
  • 1/4 cup minced fresh basil
  • 1 clove garlic, minced
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Sandwich

  • 8 slices bread (sourdough, ciabatta, or good quality country white)
  • 4 tablespoons butter, softened
  • 1 cup shredded or sliced melting cheese (e.g., mozzarella, provolone, fontina, Havarti)
  • 1 tablespoon balsamic glaze optional

Instructions
 

Bruschetta Topping

  • Combine diced tomatoes, basil, minced garlic, olive oil, salt, and pepper in a bowl. Stir and let the flavors meld for at least 10-15 minutes.
  • Lightly butter one side of each slice of bread.

Assembly and Cooking

  • Place one buttered bread slice (butter-side down) in a cold skillet. Layer with half the cheese, then the bruschetta topping, remaining cheese, and the second bread slice (butter-side up).
  • Cook on medium-low heat for 3-5 minutes per side until golden brown and crispy, pressing gently with a spatula to ensure melted cheese.

Serving

  • Remove from skillet and serve immediately. Optionally, drizzle with balsamic glaze before serving.

Notes

For best results, use good quality, sturdy bread that can hold up to the bruschetta topping. Adjust the amount of garlic and basil to your preference. If you don't have balsamic glaze, you can reduce balsamic vinegar in a saucepan until it thickens slightly.
