Classic Buttery Toffee Chex Mix

  • 6 cups Chex Cereal (Corn, Rice, or Wheat, or a mix)
  • 1 cup brown sugar packed
  • 1/2 cup unsalted butter
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • salt Pinch

Preparation

  • Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper or a silicone mat.
  • Combine the Chex cereal in a very large bowl and set it aside.

Make the Toffee

  • Melt the butter in a medium saucepan over medium heat, then stir in brown sugar, corn syrup, and salt.
  • Bring the mixture to a boil, stirring constantly; then reduce heat to medium-low and boil for 5 minutes without stirring.
  • Remove from heat and quickly stir in vanilla extract and baking soda, being careful as it will foam.

Combine and Bake

  • Pour the hot toffee mixture evenly over the cereal and stir gently until all cereal is coated.
  • Spread the coated cereal in a single layer on your prepared baking sheet.
  • Bake for 45-60 minutes, stirring gently every 15 minutes, until dry and crispy.
  • Remove from oven and let cool completely on the baking sheet to allow it to crisp further.

Notes

For best results, ensure all cereal is evenly coated with the toffee mixture before baking. Store in an airtight container at room temperature for up to a week.
