  • 1 medium head fresh cauliflower florets about 2 lbs
  • 1/4 cup unsweetened almond milk or oat milk, whole milk
  • 2 tablespoons unsalted butter or olive oil
  • 2 tablespoons cream cheese or cashew cream
  • 2 cloves fresh garlic or 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Instructions
 

Preparation

  • Wash and cut the cauliflower into equal-sized pieces.
  • Steam the cauliflower florets until very tender (10-15 minutes), or boil/roast until tender and slightly browned.

Mashing

  • Thoroughly drain the cooked cauliflower, pressing gently to remove excess water. Transfer to a food processor or large bowl.
  • Add warm almond milk, softened butter, cream cheese, minced garlic, onion powder, salt, and black pepper.
  • Process or mash until smooth and creamy, adding more warm milk if needed for desired consistency.
  • Taste and adjust seasonings as desired.
  • Serve warm as a delicious side dish.

Notes

For a richer flavor, consider using roasted garlic instead of fresh. You can also garnish with fresh chives or parsley for added freshness and color.
