Ingredients
  

Main Ingredients

  • 1 pound Pork sausage or bacon, ham, or your favorite breakfast meat
  • 6-8 slices Bread day-old (French bread, sourdough, or whole wheat recommended)
  • 2 cups Shredded cheddar cheese or a blend like Monterey Jack or Colby
  • 8 Large eggs
  • 1.5 cups Milk whole milk or 2%
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Optional Add-ins

  • 0.5 cup Diced bell peppers
  • 0.5 cup Diced onions
  • 0.5 cup Mushrooms
  • 1 cup Spinach

Preparation

  • Cook the sausage in a skillet until browned, then drain and set aside.
  • Tear bread into 1-inch cubes and spread evenly in a greased 9x13 inch baking dish.
  • Layer the cooked sausage and any optional vegetables over the bread cubes.
  • Sprinkle two-thirds of the shredded cheese over the meat and bread layer.

Assemble & Bake

  • Whisk eggs, milk, salt, and pepper together in a large bowl until well combined.
  • Pour the egg mixture over the casserole ingredients, pressing down on the bread to ensure it soaks up the liquid.
  • Cover and refrigerate for at least 30 minutes, or preferably overnight.
  • Preheat oven to 375°F (190°C), then uncover the casserole and sprinkle with the remaining cheese.
  • Bake for 45-55 minutes until golden brown and set, then let rest for 5-10 minutes before serving.

Notes

For best results, prepare the casserole the night before and let it chill overnight. This allows the bread to fully absorb the egg mixture, resulting in a more tender and flavorful casserole.
