  • 4 cups corn fresh, frozen, or canned
  • 4 oz cream cheese softened
  • 2 tbsp unsalted butter
  • 1/4 cup milk whole milk or half-and-half
  • 1 cup shredded cheese Cheddar, Monterey Jack, or blend
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder optional
  • 1 tbsp fresh chives or parsley for garnish, optional

Preparation

  • If using fresh corn, cut kernels off the cob; if frozen, thaw; if canned, drain thoroughly.
  • In a large skillet over medium heat, melt the butter.
  • Add corn kernels to the skillet and sauté for 3-5 minutes until warm and slightly sweet.
  • Reduce heat to low, add softened cream cheese and milk; stir until melted into a smooth, creamy sauce.
  • Stir in salt, black pepper, and optional garlic powder.
  • Gradually add shredded cheese, stirring continuously until fully melted and incorporated.
  • Simmer for 2-3 minutes, stirring occasionally, to meld flavors and heat through.
  • Remove from heat, transfer to a serving dish, and garnish with chives or parsley if desired; serve warm.

Notes

For extra flavor, you can add a pinch of smoked paprika or a dash of hot sauce. Ensure the cream cheese is at room temperature for a smoother sauce. This dish is excellent as a side for grilled meats or holiday dinners.
