  • 1 lb 80/20 lean ground beef (450g)
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 can crushed tomatoes (14.5 oz / 411g)
  • 1 cup beef broth (240ml)
  • 8 oz elbow macaroni (225g)
  • 2 cups shredded sharp cheddar cheese (225g)
  • 1/2 cup sour cream (120g) (optional, for creaminess)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • Pinch red pepper flakes (optional)
  • 1 tablespoon olive oil (if using leaner beef)

Instructions
 

Preparation

  • Cook elbow macaroni as directed, then drain and set aside.
  • Brown ground beef in a skillet, draining excess grease; add olive oil if using leaner beef.
  • Sauté chopped onion with the beef, then stir in minced garlic until fragrant.
  • Add crushed tomatoes, beef broth, and seasonings to the skillet, simmer for 10-15 minutes.
  • If desired, stir sour cream into the sauce until smooth.
  • Mix the cooked macaroni into the beef mixture.

Baking

  • Layer half of the beef and pasta mixture into a greased baking dish.
  • Sprinkle half of the shredded cheddar cheese over the first layer.
  • Cover with the remaining beef and pasta mixture.
  • Top the casserole with the rest of the shredded cheddar cheese.

Finish

  • Bake at 375°F (190°C) for 20-25 minutes until bubbly and golden.
  • Let the casserole rest for 5-10 minutes.

Notes

For a richer flavor profile, consider using a good quality aged cheddar cheese. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
