  • 1 lb lean ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups cooked white rice Basmati or Jasmine recommended
  • 1 can condensed cream of mushroom soup 10.5 oz
  • 0.5 cup milk or beef broth
  • 2 cups shredded cheddar cheese divided

Seasonings

  • 1 tsp salt or to taste
  • 0.5 tsp black pepper or to taste
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp paprika Optional

Optional Add-in

  • Frozen mixed vegetables peas, carrots, corn

Instructions
 

Preparation

  • In a large skillet, brown the ground beef with the chopped onion over medium heat until no pink remains, then drain any excess fat. Stir in the minced garlic and cook for one minute until fragrant.

Assembly

  • In a large bowl, combine the cooked beef, onion, rice, condensed soup, milk, 1 cup of cheddar cheese, salt, pepper, garlic powder, onion powder, and optional paprika and mixed vegetables. Mix until well combined.
  • Transfer the mixture to a greased 9x13-inch baking dish.

Baking and Serving

  • Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the casserole.
  • Bake in a preheated oven at 375°F (190°C) for 20-30 minutes, until hot, bubbly, and the cheese is golden. Optionally, broil for 1-2 minutes for a browner crust.
  • Remove from the oven and let rest for 5-10 minutes before serving with your favorite side dishes.

Notes

For a richer flavor, use beef broth instead of milk. You can customize this casserole with your favorite vegetables, such as bell peppers or corn. This casserole reheats well and is great for meal prep.
