Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried oregano
  • Salt and black pepper to taste

For the Base

  • 2 cups cooked rice (white, brown, or quinoa)

For the Toppings (choose your favorites!)

  • 1 bell pepper (any color), diced
  • 1/2 red onion, thinly sliced
  • 1 cup corn (canned, frozen, or fresh)
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • Fresh cilantro, chopped

For the Sauce (optional, but highly recommended)

  • Your favorite salsa, a drizzle of lime juice, or a simple Greek yogurt-based sauce with a touch of cumin.

Instructions
 

Prepare and Cook the Chicken

  • Toss the cubed chicken with olive oil and seasonings in a bowl.
  • Heat a skillet and cook the chicken for 6-8 minutes until browned and cooked through, then set aside.

Prepare Grains and Assemble

  • Prepare rice or quinoa according to package directions.
  • Divide the cooked rice among serving bowls.
  • Add a generous portion of cooked chicken and desired toppings to each bowl. Drizzle with sauce if desired and serve immediately.
