Instructions

  • Slice the chicken very thinly against the grain or dice it into small pieces, then thinly slice the onion and bell peppers for even cooking.
  • Heat olive oil in a large skillet over medium-high heat, then add the chicken and cook for 5-7 minutes until browned, seasoning with half of the garlic powder, salt, and pepper before removing and setting aside.
  • Add more olive oil if needed to the same skillet, then cook the sliced onions and bell peppers for 8-10 minutes until softened and caramelized, seasoning with the remaining garlic powder, salt, and pepper.
  • Return the cooked chicken to the skillet with the vegetables, mix well, and then divide the mixture into 6 portions.
  • Place one slice of provolone cheese over each portion of chicken and vegetable mixture, reduce heat to low, cover the skillet, and let the cheese melt for 1-2 minutes until gooey.
  • Lightly toast the hoagie rolls while the cheese melts, then scoop a portion of the cheesy chicken and vegetable mixture into each toasted roll and serve immediately.

Notes

For extra flavor, consider adding a dash of Worcestershire sauce or a pinch of red pepper flakes to the chicken and vegetables while cooking. You can also experiment with other cheeses like American or cheddar. Be sure to toast your hoagie rolls to prevent them from getting soggy from the filling.
