  • 1 tablespoon minced red onion (optional)
  • Salt and fresh black pepper to taste
  • 1/2 cup halved red grapes (optional, for classic version)
  • 1/2 cup chopped walnuts (optional, for classic version)
  • Fresh dill sprigs for garnish
  • 1 cucumber sliced into 1/2-inch thick rounds

Preparation

  • Cook boneless, skinless chicken breasts until they reach an internal temperature of 165°F (74°C) if not using pre-cooked chicken, then let it cool and shred.
  • Combine the shredded chicken, mayonnaise, celery, and optional red onion in a bowl, seasoning with salt and pepper.
  • For a classic twist, gently fold in red grapes and chopped walnuts into the chicken salad mixture.
  • Slice the cucumber into 1/2-inch thick rounds and spoon a small amount of chicken salad onto each slice.
  • Arrange the appetizers on a platter, garnish with fresh dill, and chill for 15-30 minutes before serving for optimal flavor and texture.
