Ingredients
  

Main Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 1 packet (or 2 tablespoons) taco seasoning
  • 16 ounces (about 2 cups) salsa
  • 1/2 cup chicken broth
  • 1-2 tablespoons fresh lime juice

For Serving

  • Corn or flour tortillas

Instructions
 

Preparation

  • Lightly grease the inside of your slow cooker or use a liner for easy cleanup.
  • Place the chicken at the bottom of the slow cooker and sprinkle evenly with taco seasoning.

Cooking

  • Pour the salsa and chicken broth over the seasoned chicken.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fork-tender.

Finishing and Serving

  • Shred the cooked chicken directly in the slow cooker with two forks and stir it well to coat in the cooking liquid.
  • Stir in the fresh lime juice and let it sit for another 10-15 minutes on the "keep warm" setting to absorb the lime flavor.
  • Serve the shredded chicken warm in tortillas with your favorite taco toppings.

Notes

For extra flavor, consider marinating the chicken in a little lime juice and a dash of chili powder before adding it to the slow cooker.
