Equipment

  • sharp knife
  • mandoline
  • food processor
  • large bowl
  • large spoon

Ingredients

For the Salad

  • 1 medium head green cabbage about 2 lbs, very finely shredded or chopped
  • 2-3 medium carrots peeled and very finely shredded

For the Dressing

  • ½ cup mayonnaise full-fat for best results
  • ¼ cup granulated sugar
  • 2 tablespoons milk any kind, whole milk recommended
  • 1 ½ tablespoons lemon juice freshly squeezed is best
  • 1 tablespoon white vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Prepare the Vegetables

  • Finely shred or chop the green cabbage and finely shred the carrots. Combine them thoroughly in a large bowl, ensuring a consistent, small size for both vegetables.

Whisk the Dressing

  • In a separate bowl, whisk together mayonnaise, sugar, milk, lemon juice, white vinegar, salt, and black pepper until smooth. Taste the dressing and adjust seasonings as needed to achieve a balanced sweet, tangy, and creamy flavor.

Combine and Mix

  • Pour the dressing over the shredded cabbage and carrots in the large bowl. Mix thoroughly with a large spoon or clean hands until all vegetables are evenly coated.

Chill for Flavor

  • Cover the bowl and refrigerate for at least 4 hours, or preferably overnight. This chilling period allows the flavors to meld and the cabbage to soften, resulting in the signature KFC-like texture.

Notes

For the best flavor and texture, do not skip the chilling step. The longer the coleslaw chills, the more the flavors will develop and the cabbage will soften to the desired consistency.
