  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 large onion chopped
  • 2 garlic cloves minced
  • 1 ounce taco seasoning packet (1.25 ounce)
  • 1 can diced tomatoes, undrained (14.5 ounce)
  • 1 can black beans, rinsed and drained (15 ounce)
  • 1 can kidney beans, rinsed and drained (15 ounce)
  • 1 can corn, drained (15 ounce)
  • 1 can Rotel diced tomatoes with green chilies, undrained (10 ounce)
  • 4 cups beef broth
  • 1 package cream cheese, softened (8 ounce)
  • 1 cup shredded Colby Jack cheese
  • Salt and black pepper to taste

  • sour cream, shredded lettuce, chopped cilantro, tortilla chips or strips, avocado

Instructions
 

Cooking Steps

  • Heat olive oil in a large pot over medium-high heat, then add ground beef and cook until browned, draining excess grease.
  • Add chopped onion to the pot and cook until softened; stir in minced garlic and cook for one minute until fragrant.
  • Sprinkle taco seasoning over the beef and onion, then stir in diced tomatoes, black beans, kidney beans, corn, and Rotel.
  • Stir in beef broth, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes to meld flavors.
  • Add softened cream cheese to the simmering soup and stir continuously until fully melted and incorporated.
  • Gradually stir in shredded Colby Jack cheese until melted and smooth, then season with salt and black pepper to taste.
  • Ladle the hot soup into bowls and serve with your favorite taco toppings.

Notes

Adjust the heat of the Rotel diced tomatoes with green chilies according to your preference (mild or hot). For a thicker soup, you can mash some of the beans against the side of the pot while simmering. Feel free to customize with your favorite taco toppings like fresh cilantro, avocado, or a squeeze of lime juice for extra zest.
