  • 1.5 lbs boneless, skinless chicken breasts (or thighs)
  • 8 oz cremini or white button mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3 garlic, minced cloves
  • 1/2 small onion, finely diced
  • 1/2 cup grated Parmesan cheese freshly grated is best!
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 tbsp fresh parsley, chopped, for garnish
  • Salt and black pepper to taste

Cooking Steps

  • Pat chicken breasts dry and season generously with salt and pepper.
  • Sear chicken in olive oil for 5-7 minutes per side until golden brown and cooked through; set aside.
  • Sauté diced onion in butter for 2-3 minutes, then add minced garlic and cook for another minute.
  • Add sliced mushrooms to the skillet and cook for 5-7 minutes until softened and golden.
  • Pour in chicken broth, scrape up browned bits, and then stir in heavy cream to simmer.
  • Simmer sauce for 3-5 minutes, stir in Parmesan cheese until melted, and adjust seasoning.
  • Return chicken to the skillet, spoon sauce over it, and simmer for 2-3 minutes to meld flavors.
  • Garnish with fresh parsley and serve immediately.

Notes

For an extra touch of flavor, you can add a splash of white wine with the chicken broth. Serve this dish with pasta, rice, or roasted vegetables.
