  • 2 boneless, skinless (about 1.5 lbs total) Chicken Breasts
  • 5-6 cups Fresh Spinach packed
  • 3 cloves Garlic minced
  • 1 small Onion finely diced
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth
  • 1/2 cup Parmesan Cheese freshly grated
  • 2 tablespoons Olive Oil
  • 1 tablespoon Butter
  • 1 tablespoon All-Purpose Flour optional
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Black Pepper or to taste
  • 1 teaspoon Dried Italian Seasoning

  • Pat the chicken breasts dry and season generously with salt, black pepper, and dried Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat, then sear chicken for 4-6 minutes per side until golden brown and cooked through; set aside and tent with foil.
  • Reduce heat to medium, add butter to the same skillet, and cook the diced onion until softened for 3-4 minutes.
  • Stir in minced garlic for one minute until fragrant, and if using, whisk in flour for another minute to create a roux.
  • Gradually whisk in chicken broth, bring to a simmer, then stir in heavy cream and simmer gently for 5-7 minutes until the sauce thickens.
  • Reduce heat to low, stir in fresh spinach until wilted, remove from heat, and stir in grated Parmesan cheese until melted and smooth; season to taste.
  • Return chicken to the skillet, spoon creamy spinach sauce over it, and serve immediately.

Notes

For extra flavor, you can deglaze the pan with a splash of white wine after searing the chicken before adding the butter and onion.
