  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp dried basil
  • 1/2 tsp (to balance acidity) sugar
  • Salt to taste
  • Black pepper to taste

  • In a large pot, sauté chopped onion in olive oil over medium heat for 5-7 minutes until soft. Add minced garlic and cook for another minute until fragrant.
  • Stir in crushed tomatoes, diced tomatoes with their juices, dried basil, vegetable broth, and sugar.
  • Bring to a gentle boil, then reduce heat to low, cover, and simmer for 20-30 minutes, stirring occasionally.
  • Carefully blend the soup until smooth using a blender or immersion blender, being cautious with hot liquid.
  • Return the pureed soup to the pot and stir in the heavy cream.
  • Season with salt and black pepper to taste, adjusting sugar if needed to balance acidity.

Notes

For an extra rich bisque, you can add a splash of white wine with the tomatoes. Garnish with fresh basil or croutons before serving.
