  • 1.5 lbs Boneless, Skinless Chicken Breasts sliced horizontally
  • 2 tbsp Olive Oil
  • 3-4 cloves Garlic minced
  • 1/2 cup Sun-Dried Tomatoes packed in oil, drained and chopped
  • 5-6 oz Baby Spinach
  • 4 oz Cream Cheese softened
  • 1/2 cup Heavy Cream
  • 1/2 cup Chicken Broth
  • 1/2 cup Parmesan Cheese freshly grated
  • 1 tsp Italian Seasoning
  • Salt to taste
  • Black Pepper to taste

Preparation

  • Slice each chicken breast horizontally and pat dry. Season with salt, pepper, and ½ teaspoon Italian seasoning.

Cooking

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown, then remove and set aside.
  • Reduce heat to medium, add remaining 1 tablespoon olive oil, and sauté minced garlic for 30 seconds until fragrant.
  • Stir in chopped sun-dried tomatoes, then add baby spinach in batches, stirring until completely wilted.
  • Stir in softened cream cheese until melted, then pour in heavy cream and chicken broth to create a smooth sauce. Add remaining ½ teaspoon Italian seasoning and Parmesan cheese, then simmer for 3-5 minutes until sauce thickens slightly.

Finish and Serve

  • Return seared chicken to the pan, spoon sauce over it, and simmer for another 2-3 minutes to warm through and absorb flavors.
  • Taste and adjust seasoning as needed. Serve hot, garnished with extra Parmesan or fresh basil if desired.

Notes

For extra richness, use full-fat cream cheese and heavy cream. This dish pairs well with pasta, rice, or a simple green salad.
