  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes, packed in oil drained and chopped
  • 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon dried Italian seasoning (or a mix of dried oregano, basil, and thyme)
  • Salt to taste
  • freshly ground black pepper to taste
  • fresh parsley chopped, for garnish (optional)

Cooking Steps

  • Pat chicken cutlets dry and season with salt and pepper.
  • Sear chicken in olive oil for 3-4 minutes per side until golden, then remove and set aside.
  • Sauté chopped onion for 3-4 minutes, then add minced garlic and cook for another minute.
  • Deglaze the pan with chicken broth, then stir in sun-dried tomatoes and Italian seasoning and simmer for 1-2 minutes.
  • Stir in heavy cream and Parmesan cheese, then cook gently until the sauce thickens slightly, about 3-5 minutes.
  • Add spinach until wilted, then return the chicken to the skillet and simmer for 2-3 minutes to finish cooking.
  • Adjust seasoning with salt and pepper, garnish with parsley if desired, and serve immediately.

For an extra touch, serve this creamy chicken over pasta or with a side of crusty bread to soak up the delicious sauce.
