Classic Crispy Mashed Potato Cheese Bites

These crispy mashed potato cheese bites are a perfect way to transform leftover mashed potatoes into a delicious appetizer or snack. Crispy on the outside, and cheesy and creamy on the inside, they're sure to be a crowd-pleaser.

Ingredients
  

Potato Mixture

  • 2 cups leftover mashed potatoes Ideally thick, not too watery. If yours are very thin, you might need to add a bit more flour or breadcrumbs to the mixture.
  • 1 cup shredded cheddar cheese Or a blend of your favorite melting cheeses like Monterey Jack, Gruyere, or even a spicy pepper jack.
  • 1 large egg Acts as a binder.
  • 1/4 cup all-purpose flour Helps bind the mixture and absorbs any excess moisture.
  • 1/4 teaspoon garlic powder For that subtle aromatic kick.
  • 1/4 teaspoon onion powder Enhances the savory potato flavor.
  • Salt and black pepper Don't forget your seasonings!
  • 1/4 cup finely chopped fresh parsley For a pop of color and freshness.

Coating & Frying/Baking

  • 1 cup panko breadcrumbs For the extra crispy coating. Regular breadcrumbs work too, but panko gives superior crunch.
  • Vegetable oil or canola oil About 2-3 inches in a deep pot or skillet.
  • Cooking spray To help achieve a golden crust.

Instructions
 

Prep the Potato Mixture

  • In a large bowl, combine mashed potatoes, shredded cheese, egg, flour, garlic powder, onion powder, salt, pepper, and optional parsley. Mix until well combined to form a thick, manageable dough.

Shape the Bites

  • Take about a tablespoon of the mixture and roll it into 1-1.5 inch balls or cylinders. This should yield about 20-25 bites.

Coat for Crispy Perfection

  • Place panko breadcrumbs in a shallow dish and roll each potato bite until thoroughly coated, pressing gently to ensure adherence for maximum crunch.

Chill (Optional but recommended)

  • For best results, arrange coated bites on a parchment-lined plate or baking sheet and refrigerate for at least 30 minutes to help them hold their shape during cooking.

Cook Them Up (Choose Your Method)

  • To fry: Heat 2-3 inches of oil to 350-375°F (175-190°C). Fry bites in batches for 3-5 minutes, turning until golden and crispy, then drain on paper towels.
  • To bake: Preheat oven to 400°F (200°C). Arrange bites on parchment, mist with cooking spray, and bake for 20-25 minutes, flipping halfway, until golden and crispy.

Serve Immediately

  • Transfer the hot, crispy bites to a serving platter and enjoy them right away.

Notes

For extra flavor, try adding a pinch of smoked paprika to the potato mixture. You can also experiment with different cheese varieties for a unique twist. These bites are best served fresh, but leftovers can be reheated in the oven or air fryer for a few minutes to regain crispiness.
