  • 2 lbs boneless, skinless chicken thighs
  • 1/2 tsp salt (plus more to taste)
  • 1/4 tsp black pepper (plus more to taste)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup chicken broth (low sodium recommended)
  • 1 packet onion soup mix (1 oz)
  • 2 tbsp cornstarch
  • 2 tbsp cold water

  • Pat chicken thighs dry and season generously with salt and pepper.
  • Whisk together cream of chicken soup, chicken broth, and onion soup mix in a medium bowl.
  • Place seasoned chicken in a single layer in the slow cooker.
  • Pour the soup mixture over the chicken, then cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  • (Optional) Remove and shred the chicken before returning it to the slow cooker, or serve whole.
  • Whisk cornstarch and cold water to create a smooth slurry.
  • Stir the cornstarch slurry into the slow cooker liquid, cook on HIGH for 15-30 minutes, stirring occasionally, until thickened.
  • Taste and adjust seasoning as needed, then serve over your favorite sides and enjoy.

Notes

This recipe is perfect for a comforting family meal. For a thicker gravy, you can add a little more cornstarch slurry. Serve with mashed potatoes or rice to soak up all the delicious gravy.
