Main Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 cups low-sodium chicken broth
  • 1 can condensed cream of chicken soup (10.5 oz)
  • 1 packet dry onion soup mix (1 oz)
  • 1 tsp poultry seasoning
  • 0.5 tsp black pepper

For the Slurry

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Cooking Steps

  • Place the chicken breasts or thighs at the bottom of your slow cooker.
  • In a medium bowl, whisk together the chicken broth, cream of chicken soup, dry onion soup mix, poultry seasoning, and black pepper.
  • Pour the mixture evenly over the chicken in the slow cooker, then cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours until tender.
  • Remove and shred the cooked chicken, then return it to the slow cooker and stir it into the liquid.
  • Whisk together cornstarch and cold water to create a slurry, then stir this into the gravy mixture.
  • Cover and continue to cook on HIGH for 20-30 minutes, or until the gravy thickens to your desired consistency.
  • Taste and adjust seasonings as needed, then serve the chicken and gravy hot.

Notes

For extra flavor, consider browning the chicken breasts slightly before placing them in the slow cooker. You can also add some frozen peas or carrots during the last hour of cooking for added vegetables.
