  • 1.5-2 lbs boneless, skinless chicken breasts or thighs
  • 6-8 cups low-sodium chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 2-3 cloves minced garlic
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • 2-3 cups egg noodles
  • Fresh parsley for garnish (optional)

  • Place the chicken breasts or thighs in the bottom of your slow cooker.
  • Layer the chopped carrots, celery, onion, and minced garlic over the chicken.
  • Sprinkle dried thyme, dried rosemary, and bay leaf over the vegetables, then season generously with salt and pepper.
  • Pour the chicken broth over all the ingredients in the slow cooker.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and easily shreds.
  • Carefully remove the cooked chicken from the Crockpot, shred it into bite-sized pieces using two forks, and discard the bay leaf.
  • Return the shredded chicken to the Crockpot and stir in the egg noodles.
  • Cook on high for an additional 20-30 minutes, or until the noodles are tender, watching to prevent overcooking.
  • Taste the soup and adjust seasonings as needed, adding more salt, pepper, or herbs if desired.
  • Ladle into bowls, garnish with fresh parsley if desired, and serve.

Notes

For a richer flavor, you can sauté the vegetables briefly before adding them to the slow cooker. If you prefer a thicker soup, you can add a cornstarch slurry at the end of the cooking process.
