Ingredients
  

Main Ingredients

  • 1.5 - 2 pounds boneless, skinless chicken breasts or thighs
  • 6-8 cups chicken broth low sodium
  • 2-3 carrots peeled and sliced or diced
  • 2-3 celery stalks sliced
  • 1 onion chopped
  • 2-3 cloves garlic minced (or 1 teaspoon garlic powder)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 4-6 ounces egg noodles wide or medium
  • ΒΌ cup fresh parsley chopped, for garnish
  • Salt and black pepper to taste

Instructions
 

Combine & Cook

  • Place chicken, carrots, celery, onion, garlic, thyme, rosemary, and bay leaf in the slow cooker. Pour in chicken broth, season with salt and pepper, then cook on low for 6-8 hours or high for 3-4 hours.

Shred & Noodle

  • Remove and shred the cooked chicken, discarding the bay leaf. Return shredded chicken to the slow cooker, add egg noodles, and cook on high for 15-20 minutes until noodles are tender.

Serve & Savor

  • Adjust seasoning as needed, stir in fresh parsley, and ladle into bowls to serve.

Notes

For extra flavor, you can brown the chicken slightly before adding it to the slow cooker. Adjust the amount of noodles based on your preference for a thicker or thinner soup.
