  • 1 cup Chicken broth low sodium
  • 1 cup Heavy cream
  • 4 oz Cream cheese softened, full-fat
  • 4-5 cloves Garlic minced (or 1.5 tsp garlic powder)
  • 1/2 cup Parmesan cheese freshly grated, plus more for serving
  • 1 tbsp Italian seasoning
  • Salt To taste
  • Black pepper To taste
  • 8 oz Your favorite pasta (such as penne, rotini, or fettuccine)
  • Fresh parsley Chopped, for garnish (optional)

  • Cut chicken breasts into 1-inch pieces and place them in the slow cooker.
  • Season the chicken with Italian seasoning, garlic, salt, and pepper. In a separate bowl, whisk together chicken broth, heavy cream, and softened cream cheese, then pour over the seasoned chicken.
  • Cover and cook on low for 3-4 hours or on high for 2-3 hours, until the chicken reaches an internal temperature of 165°F (74°C).
  • If desired, remove and shred the cooked chicken with two forks, then return it to the slow cooker.
  • Stir in the freshly grated Parmesan cheese until it melts and forms a smooth sauce.
  • While chicken cooks, prepare pasta according to package directions until al dente, then drain.
  • Add the cooked and drained pasta to the slow cooker with the chicken and sauce, then gently stir to combine.
  • Ladle into bowls, garnish with extra Parmesan and fresh parsley if desired, then serve.

Notes

For a richer flavor, you can sauté the chicken briefly before adding it to the slow cooker, but it's not necessary. Adjust the amount of garlic and Parmesan cheese to your personal preference. This recipe is also great with other protein options, such as turkey or pork. Feel free to use gluten-free pasta if you have dietary restrictions.
