  • 1.5 - 2 pounds Italian Sausage mild, hot, or sweet, or a mix
  • 3-4 Bell Peppers red, green, yellow, orange, sliced
  • 1 yellow Onion roughly chopped
  • 1 can Diced Tomatoes 28-ounce, undrained
  • 2 tablespoons Tomato Paste
  • 3-4 cloves Garlic minced
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Black Pepper or to taste
  • 1-2 tablespoons Olive Oil for browning, optional
  • Red Pepper Flakes Pinch, Optional

Preparation

  • Brown the Italian sausages in a large skillet with olive oil over medium-high heat for 5-7 minutes; then transfer them to the slow cooker.
  • Slice the bell peppers, chop the onion, and mince the garlic.
  • Add the prepared vegetables, diced tomatoes, tomato paste, Italian seasoning, salt, black pepper, and optional red pepper flakes to the slow cooker with the sausages.
  • Gently stir all ingredients to ensure even distribution and nestle the sausages among the vegetables.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the sausages are cooked through and vegetables are tender.
  • Taste and adjust seasonings, then serve hot with your preferred accompaniment.

Notes

For best flavor, do not skip browning the sausage. This dish is versatile and can be served in many ways, making it a great meal prep option.
