  • 1-2 lbs lean ground beef or turkey
  • 1 large onion chopped
  • 2 cans diced tomatoes 14.5 oz, undrained
  • 1 can tomato sauce 15 oz
  • 1 can black beans 15 oz, rinsed and drained
  • 1 can kidney beans 15 oz, rinsed and drained
  • 1 can corn 15 oz, drained
  • 1 can diced green chiles 4 oz, undrained
  • 1 packet taco seasoning mix 1.25 oz
  • 1 packet ranch seasoning mix 1 oz
  • 1 cup beef broth or water

Preparation

  • In a large skillet, brown the ground meat and chopped onion over medium-high heat, then drain any excess fat.
  • Transfer the cooked meat and onion to your slow cooker, then add the diced tomatoes, tomato sauce, all beans, corn, and green chiles.
  • Sprinkle both the taco and ranch seasoning mixes into the slow cooker.
  • Pour in the beef broth and stir everything well to ensure all ingredients are evenly distributed.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, taste and adjust seasonings with salt, pepper, or hot sauce as desired.

Notes

For a thicker soup, reduce the amount of broth or add a cornstarch slurry during the last 30 minutes of cooking. Top with your favorite taco fixings like sour cream, shredded cheese, and crushed tortilla chips.
