Ingredients
  

Dry Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter (2 sticks), softened
  • 1.5 cups granulated sugar
  • large egg
  • 1 teaspoon vanilla extract

Preparation

  • In a medium bowl, whisk together the flour, baking powder, and salt, then set aside.
  • In a large bowl, beat the softened butter and granulated sugar until light and fluffy for 2-3 minutes.
  • Beat in the egg and vanilla extract until combined, scraping down the bowl as needed.
  • Gradually add the dry ingredients to the wet, mixing on low speed until just combined without overmixing.
  • If rolling, chill the dough for at least 30 minutes; otherwise, preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.

Baking

  • For rolled cookies, roll dough to ¼ inch thickness and cut shapes; for drop cookies, roll into 1-inch balls.
  • Place cookies 1-2 inches apart on baking sheets and bake for 8-10 minutes until edges are lightly golden.
  • Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
