  • 12 large eggs
  • 1 cup whole milk or 2%
  • 6-8 slices day-old bread, cubed
  • 1 pound breakfast sausage, crumbled and cooked
  • 1.5 cups shredded cheddar cheese
  • 0.5 small onion, finely diced
  • 0.5 bell pepper (any color), finely diced
  • Salt to taste
  • Pepper to taste

Preparation

  • In a large skillet, cook the breakfast sausage until browned; drain excess grease.
  • Add diced onion and bell pepper to the skillet with the sausage and cook for 5-7 minutes until softened.

Assembly

  • In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
  • Grease a 9x13 inch baking dish and spread the cubed bread evenly across the bottom.
  • Sprinkle the cooked sausage and vegetable mixture over the bread.
  • Evenly sprinkle 1 cup of shredded cheese over the sausage and veggies, then pour the egg mixture over everything.
  • Top with the remaining 1/2 cup of shredded cheese.

Baking

  • Cover the baking dish with foil and refrigerate for at least 30 minutes, or preferably overnight, for the bread to absorb the egg mixture.
  • Preheat oven to 375°F (190°C), remove foil, and bake for 35-45 minutes until set and golden brown.
  • Let the breakfast bake rest for 5-10 minutes before slicing and serving to allow it to set.

Notes

For best results, let the breakfast bake refrigerate overnight to fully absorb the egg mixture and enhance flavors. You can easily customize this bake by adding other vegetables like mushrooms or spinach, or different cheeses.
